"Raspadura" o "Panela" (sugar cane brick) and "jugo de caña" (sugar cane juice) are very traditional elements in Panamanian food. Especially in the interior of the country, you can still find people that love to cool off on a hot day by drinking some sugar cane juice.
The wooden "trapiche" (sugar cane press) is the traditional way to obtain the juice, which is used to prepare the "raspadura" or "panela". While driving around in the Chiriqui province, we stopped by this "trapiche" which is owned and managed by a family in the area of San Carlos.
